The flavors of pizza in a quiche!
Ingredients
1 premade pie crust
1 c diced mini sweet peppers
~20 slices of pepperoni, cut into thin strips
3/4 c mozzarella cheese, shredded
8 large eggs
1 Tbsp Spice House Little Italy seasoning (regular old Italian seasoning will do the trick)
1 tsp salt
1 tsp black pepper
1 Tbsp Soothsayer Chicago Pizza Summit Sauce, for dipping
Directions
Preheat oven to 450 and adjust rack to center.
In a small skillet over medium heat, add pepperoni strips until oil emits onto the pan. Add sweet peppers, toss together and sautee in pan for ~3-5 minutes. Remove from heat and set aside.
Meanwhile, in a medium mixing bowl, beat eggs and mix in seasoning, salt and pepper.
Place pie crust in pie plate and press along the bottom and edges for a smooth surface. Add pepperoni/pepper mixture and mozzarella cheese on top of the pie crust. Pour the egg mixture over the top. Optional: add a couple extra sprinkles of the Italian seasoning to the top.
Bake for approx. 30 minutes, or until top is a golden brown and toothpick inserted in center comes out clean.
Remove from oven and allow to cool (preferably on a wire rack) for approx. 5-10 minutes before cutting and serving. Dip in Soothsayer Pizza Summit Sauce for an extra punch of flavor.
