Peanut Butter Oatmeal Bites

A super simple one bowl, no bake snack with a whole lot of taste and texture! Great for meal prep, a treat, or serving a crowd.


Ingredients

1 cup of oats (any variation or combination of Old Fashioned and Steel Cut - steel cut will give you more crunch)

1 cup of shredded coconut (I keep a deli container of toasted coconut in the pantry, but straight out of the bag will do!)

1/2 cup of peanut butter

1/3 cup of mini chocolate chips

1/3 cup of honey or agave syrup

1 tsp vanilla or almond extract


Directions

  1. Mix all ingredients in a large bowl until it is a well blended mixture - you want to get a little of everything in each bite! Refrigerate for at least 30 minutes to allow it to set.

  2. Using a 1 Tablespoon cookie scoop (or you can use a regular spoon in approximate 1 Tbsp increments), make little balls or blobs out of the mixture.

  3. Keep in a sealed container in the fridge until ready to serve.


Bonus: This is a great base recipe but it's super easy to modify with other ingredients by just maintaining the ratios. Sometimes instead of shredded coconut, I'll use chopped walnuts or sliced almonds. Sometimes I'll use half the coconut and add in dried cranberries or cherries. Sometimes I throw a couple tablespoons of chia seeds in there. You can even roll these in sprinkles to make them festive - I use the rainbow kind when I know that my little niece will be having some to make them more fun for her.
